Hey, I like intuitive eating, although I've never read a book about it or read philosophy, just what works for me.
First, I learned to eat and cook healthy using traditional meal plans etc. Mostly low carb works the best for me.
Because we can't intuitively crave healthy meals when we don't know or aren't used to them, right?
Once I felt my body had become used to healthy meals, I stopped planning and counting calories. Now it's more like "what healthy meal would I like to eat today?". I also allow myself to eat a few unhealthy things during the week, but then I try to eat more healthy on other days. It's not about counting calories or macros anymore, just keeping the balance. I found out that my body is actually less satisfied with eating junk because somehow it feels its empty calories. I do eat sweets and white bread etc, so I don't crave them. I just don't feel like eating them often. It's all a matter of habit.
