A couple of months ago I tried a vegetarian / high fiber diet. It was mostly high carbs. I could not believe how my anxiety went through the roof and sleeping was difficult.
Then I learned about the Carnivore diet (you eat almost all meat) and how much people reported it assisted with relaxation and sleep.
It really made me think about how improved my anxiety got once I reduced carbs. Really gives you pause.
