Outstanding ideas! I always use real unsalted butter for my cookies. Texture is the issue here. I will chill the dough before using. Adding extra baking soda is a thought. For fluffy pancakes, I usually add an egg to the mix, extra baking soda, and a couple squeezes of a lemon. I then let it sit for a couple hours to leaven. In the case if cookies, it is different. Refrigeration is the better idea. I will place all the ingredients together and combine with a fork.

Cant go to the gym which I did regularly for years.
Cant even go to the dog park. Close to finishing the first of my series of childrens books. Blocked on finishing. How are you doing with your book, bicyclist? Ordered Nutrisystem to control my binge eating. The food is really disgusting with some pouches of food like they have in the military. Many lunches are simply snack bars. This isnt even healthy. Of course I ate all the little ice cream desserts first!!!LOL I am going to use turkey patties, fish and vegetables to supplement this. I do pretty well on Weight Watchers because vegetables are zero points. At least the concept of getting serious about weight loss has stopped me from eating huge bags of movie time buttered popcorn, which I had been doing.WHAT ARE YOU FOLKS DOING TO FIGHT BOREDOM? The modeling business is horrible. So abusive to those women (and maybe, men, too--not sure). As for fighting boredom, am binge-watching shows, cleaning, baking occasionally, reading, writing, ane getting outside at least once a day for at least a few minutes. Not sure why these turned out so poofy--usually, they are much flatter. Dunno. But they taste good! Never made them white choc chips before. And it cheered me up to make them! So, that's good, I guess...

Those look great! My cookies often come out poofy too. They disappear regardless.
I was thinking of adding white chocolate chips in addition to the regular. My audience loves a chocolate cookie from Subway that has both kinds. I think the recipe you shared might get us close. We're planning to try it this week. |

So, had this giant bike ride yesterday and didn't really eat enough afterward. So, had dreams all night about croissants from a place called Ken's Artisan Bakery, recently voted 2nd best in town. I do agree with that, as the bakery nuvrei's croissants are just slightly better.
Anyhoo, now, I really want a croissant. Possibly, actually, in truth, maybe more than one croissant. I have always wanted to try to make them. I know that is very difficult and I am not a very talented baker. But I do have a lot of free time right now and it would be a fun project to try. So, I just might do it. Oh, those almond ones are incredible!! I think I am going to make some sesame ones, where you dip them in sesame seeds right after you egg wash them. Yum!!
