But I feel very unsure of monetizing them. I do woodwork for example but 1) I’m not that great at it 2) don’t know exactly how to make a steady income at it and, 3) feel bored just thinking about doing little trinkets and the jobs that might come my way. I want to do the projects that appeal to me, when I want to do them.

Hobbies are valuable for our recovery and positive mental health. I would say, if you can afford it, make your 'art' for yourself and your own enjoyment. Following our creativity (which we in the mental health community have a tendancy to possess) is extremely therapeutic.

If it is also within your means, find yourself a guild to join or lessons to take.

It's not even "when I want to do them" as much as it is about the projects I want to do. Projects that challenge me to learn new skills and perfect others.
