9/10 - Fresh yellow fin tuna steak first coated with soy dipping sauce then tuxedo sesame seeds, and then seared on hot pan to medium rare (with special dipping sauce and wasabi paste on the side); homemade vegetable fried rice using leftover brown rice; Campari tomatoes; half of a beer; single espresso; homemade creme brulee

The sort of "appetizer" or carb course was a definite 10/10. The crab cake, which is always yummy, was leftover, so maybe 7 or 8/10. I served that with fresh lemon juice and a delicious Polish Tartar sauce. The veggie salad side was just a simple baby spinach with Campari tomatoes, cucumbers, scallion, olives, with evoo and lemon juice. The wine was a very nice Chablis.
The "appetizer"/carb course was amazing, indeed! I toasted evoo brushed salted baguette slices in my toaster oven until golden brown. Then I spread a mixture of softened goat cheese and fresh minced rosemary on that. Brushed that with honey and topped with thin half slices of prosciutto, a little Carter & Cavero Balsamic vinegar (super high-quality) and a spinach leaf. Normally it should have been an arugula leaf, but I didn't have arugula. It didn't matter. They were amazing! I ate two, and gave my husband three. I'm definitely serving these crostini again for guests, or just hubby and me. |

I cooked, so it was only about a 5/10. Just grilled some chicken on the George Foreman and microwaved some steamed veggies.

10/10 - I give it a perfect score because it was worthy of one. The only very mild negative was that the meat entree got a little cold waiting for our guest to arrive. That was not my fault. Either she was late or my husband gave her a different time than he told me he told her. I asked him when she was coming and he said 5:30 pm, so I had the dinner ready just after that time. She didn't come until almost 6:30 pm. Hubby then said, "Oh, maybe I told her a little after 6 pm." That bugger!
I made a homemade Czech soup called Bramboracka. It's a soup full of root veggies, onion, cremini or wild mushrooms, potato, caraway, and various herbs. The main course was a flank steak roulade, which I stuffed with baby spinach, home roasted red peppers, prosciutto, herbs/seasonings, and Asiago cheese. The sides were parsley boiled baby potatoes, and roasted carrots and roasted Brussels sprouts. The carrots I glazed with a simple butter and brown sugar glaze. The Brussels sprouts were coated with a high-quality olive oil and Balsamic vinegar. I wasn't going to serve baguette, but our guest asked for bread, so we served that with butter. We started the meal with Prosecco, and then moved on to a nice French red. For dessert, we had a Bishop's bread that I had made yesterday. That's basically a sweet bread with a very egg white batter, bittersweet chocolate chunks, chopped roasted hazelnuts, lemon zest, and chopped candied orange peel. |

3/10: Iceberg lettuce with sunflower seeds, shredded cheddar and monterey jack cheese, cubed chicken and Italian salad dressing. I ate badly today. I had popcorn and over-loaded on the carbs with lemon poppy seed bread w/icing (not NAFLD friendly food) and then later a banana chocolate chip muffin. Too much gluten dries me out and makes me cough, makes my skin break out, and I feel horrible overall until I eat better with fruits and veggies again.
