8.5/10 - I defrosted a huge chunk of a homemade roasted vegetable lasagna I made a number of days back. It was yummy. Not quite as good as before it was frozen. With that I made a spring greens salad with orange, beet, and scallion slices topped with walnut bits and high-quality olive oil and Balsamic vinegar.

2/10. I had this Amy’s tofu something or other TV dinner. I had originally ordered a rice pasta Mac and cheese one. But it was a pick up order and they substituted the rice pasta with the tofu one. I had never had the tofu kind so I thought I’d give it a try. I got through 2/3 of it but the tofu part had mushrooms it. Now I’m just nauseated.

7/10 - Artichoke raviolis with red sauce, Parmesan, and ricotta cheese. It was good, but I didn't do the raviolis justice. The sauce/topping was intended for a tortellini that I thought was in the fridge. Not the artichoke ravioli. I looked for the tortellini, but it is buried so much in the freezer that I gave up the search. Normally, I would have made an olive oil and veggie based topping for the artichoke ravioli.

Eggs and oatmeal. What I eat almost every day for lunch or dinner. If I eat lunch I don't eat dinner. 8/10 because I never get tired of eggs, oatmeal, and iced coffee or tea. (Diet that works.)

3/10. A can of tuna and a can of green beans. I’m trying to eat low calorie so it wasn’t the greatest but it was healthy.
