I saw a recipe for a baked brie today, stuffed with fried onion and fig jam, wrapped in puff pastry, baked, then surrounded by radicchio leaves dressed with vinaigrette.

Y'know I would really love to go spend a week with my brother and his wife and just spend the time cooking/baking with her. She is so creative and for her, it's all about the presentation. Everything she makes is just beautiful and delicious! We spent one Thanksgiving with them so I know it tastes as good as it looks. And she's always posting her beautiful creations on Facebook.

I got my yearly box of german gingerbread from my brother on Saturday. I have been nibbling ever since. It's so delicious. He'd told me it was coming so I told L last week that I'd bring her some again, last year we split a piece during a session. She said "Just a bite!!" haha This collection includes boxes of these tiny gingerbread cookies, like the size of a silver dollar, so I'm gonna bring her 2 of those.

I love brie en croute. I usually make it topped with onions caramelized with a little balsamic before wrapping it with the puff pastry and an egg wash on top. I also make one with fig jam for a sweet variety, but I suppose any jam would be awesome. That's my go-to bring-to-a-party dish. So yummy and not that hard to make.

Working right after session yesterday wasn't as bad as it could have been. I told T that we needed to be careful, so we intentionally kept track of how overwhelmed I was feeling and slowed down 10 minutes before the end of session and talked about less-terrible things.
It was horribly, horribly awkward. But tbh I think it almost helped that I was alone in my car with T in a very small window on my phone, rather than at home in my bedroom with his face taking up my laptop screen (or even worse, in person). I mean, I miss in-person sessions in general but for this particular topic the less of his presence the better. |

Amelia, my cat, went out exploring last night around dinner time. She came slinking in with what we think was transmission fluid all over her! We immediately got her into a bath and put some dawn on her and tried to scrub it off. In the meantime I was calling the emergency vet to see if we could get her in because I didn't know if she had ingested any. After filling out a billion online forms, the emergency vet calls me and tells me just to bathe her and there's nothing they can do. She is still a hot mess. We give her another bath, this time with vegetable oil and dawn because not so helpful emergency vet said that vegetable oil or olive oil would help cling to the transmission fluid. Yeah, right. I ended up with a wet, angry, oily, dish-soapy cat. We went through a ton of towels trying to dry her off but they were getting dirty so we kept going through more towels. She is still leaking fluid from her coat this morning, all over my bed and pj's of course. I fed though and she ate so I am reasonably sure she didn't ingest any of the transmission fluid besides maybe licking some off of her fur. She looks miserable. I am miserable. My beautiful cat looks like a drowned rat. I don't know what else to do to clean her! We found the pan of transmission fluid that she must have jumped into in my neighbors yard. It was right next to the fence. So she must have jumped over the fence and landed in it. That explains how it got on her belly. Poor Amelia!

I just asked my boss for some encouragement. Work is sucking the life out of me today. (I didn't tell her that part.) Plus I'm worried about my cat. I swear if it isn't one cat, it's another. My Mom said, children are like that too. At least I had the foresight not to have any of those! God knew I couldn't handle the stress of children! My boss said I didn't really need her encouragement. Just look around at all the people I help. That was kind. I don't know if it is true but it is kind anyway. Maybe all of us that are lacking in motivation today can ask someone for encouragement!

I think I gotta try to give Amelia another bath tonight. She's going to hate it and she's going to Yowl, but she looks terrible from that transmission fluid. Unless she has miraculously cleaned herself since I've been at work, I think another bath is in her future. It's really hard to give her a bath. Someone has to hold her tight and the other one has to try to scrub her fur. My bathroom is not that big! She gets so worn out fighting us during the bath that she looks utterly exhausted when it comes to the towel drying time. I wonder if she would let me blow dry her fur tonight. I wonder if she would like that or if the noise would bother her. My Mom was going to go buy some more throw away towels, the ones that are like $2.88 at Wal-mart because we pretty much depleted all my Mom's old towels last night giving Amelia her two baths. And I'm pretty sure my Mom doesn't want transmission fluid going into her washing machine. I'm going to need new sheets and new pj's too because Amelia was laying on mine this morning. My pink flamingo sheets!!!! Sigh!
